1 lbs. Raw cleaned, peeled,and deveined shrimp (I use like a 41/50)
1 bag frozen broccoli florets
salt and pepper
5 large russets potatoes (washed and dried)
1 jar of processed cheese (a Cheese Whiz or a Nacho Cheese)
1. Pre-heat oven to 375 degrees. Put potatoes onto a baking sheet. Drizzle with olive oil and season with salt and pepper. Rub all around the potato. Pearce potatoes with a fork. Bake for an hour or until soft to “squeeze”
With about 20 minutes left baking the potatoes, put broccoli on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 20 minutes in oven with potatoes.
3. When broccoli and potatoes are done, in large skillet sauté shrimp in butter and season with Cajun seasoning. They cook quickly. Cook until pink.
4. Build potato. Slice potato open, drizzle on cheese, top with broccoli and then shrimp. Delicious.
