Toasted Black Eyed Peas

2- 15.7 oz cans of black eyed peas
3 tbsp. of olive oil
1- 1 1/2 tbsp. Cajun Seasoning


1. Drain and rinse cans of black eyed peas. Spread on a baking sheet and pat dry with paper towels. Make sure beans are completely dry.
2. In medium sized bowl, mix olive oil and Cajun seasoning. Add dry black eyed peas and toss around.
3. Spread back on to baking sheet lined with parchment paper in a single layer. Bake at 425 degrees for 45-50 minutes. Toss every 10 minutes while baking.
4. Allow beans to cool for 30 minutes. Beans will look burnt, but that is what you are going for.
