philly cheesesteak nachos

Black Bean Corn Salsa
-1 can of black beans (rinsed)
-1 can of sweet corn (drained)
– 1 red onion chopped
– 1 green pepper chopped
-1 red pepper chopped
– 1 yellow pepper chopped
– 1 jalapeno (seeds removed and chopped finely)
– ½ cup chopped cilantro
-juice of one lime
-salt and pepper

Mix all ingredients together and season with salt and pepper to taste.

Chipotle Sour Cream Dip
1 cup mayonnaise
1 cup sour cream
2 chipotle peppers
1 tbsp. adobo sauce
salt and pepper

1. In food processor, mix mayonnaise, sour cream, chipotle peppers, and adobo sauce.
2. Season to taste with salt and pepper

Cilantro Sour Cream Dip
Large bunch of cilantro chopped
1 cup mayonnaise
1 cup sour cream
salt and pepper

1. In food processor, combine mayonnaise, sour cream, and cilantro.
2. Season to taste with salt and pepper

– 3 Haas Avocado (peeled and seeded)
– Juice of one lime
– 1 tsp Adobo Season Salt (Goya Brand)
-1/2 tsp cayenne pepper
-1/2 tsp cumin
-1 clove minced garlic
– 1 jalapeno (seeds removed and diced very fine)
– 1 red onion chopped
– 2 plum tomatoes (seeds removed and chopped)
– 1/4 cup chopped cilantro


1. In food processor, blend avocado and lime juice.  I like my guacamole on the smooth side. Add water, if necessary, to get to texture you are looking for.  For chunky, use a fork or potato masher and make avocado.
2. Add season salt, cumin, cayenne pepper, minced garlic and blend.
3.  Scoop out into serving dish and fold in tomato, onion, cilantro, and jalapeno.
4. Taste and season to taste with salt….

Spicy Queso Sauce
1 jar of processed cheese (Cheese Whiz)
1 can Rotel
1/4 cup milk
1 tsp cayenne pepper

1. In medium sized pot over medium heat, mix all of the ingredients together. Bring to a simmer and reduce heat to low.
